富马酸为白色颗粒或结晶性粉末,无臭,有特异性酸味,酸味强,约为柠檬酸的1.5倍,熔点286-287℃,200℃以上升华,290℃分解,230℃以上先转变为顺丁烯二酸,然后失水生成顺丁烯二酸酐。与水共煮可得苹果酸。相对密度1.635(20℃),易溶于乙醇和丙酮,微溶于水和乙醚,不溶于苯和四氯化碳,在100g水中的溶解度为:25℃0.63g,40℃1.07g,60℃2.4g,100℃9.8g。富马酸的吸湿性很小,且与碳酸氢钠中和所需量小。3%的水溶液pH值为2.0-2.5。
